A blue loaf of bread stuffed with cream cheese and mayonnaise AND serves 16 people?! Oh the possibilities!
- 4 hard cooked eggs
- 2 tbsp finely minced scallions
- 1 tbsp finely minced onion
- ¼ cup mayonnaise
- 2 tbsp finely chopped walnuts
- 2 tbsp chopped pimento
- 2 tbsp minced celery
- salt and pepper
- 2 lb cream cheese
- 1 ½ lb loaf white bread, crusts removed and cut horizontally into 5 layers
- 1 lb can salmon, drained
- ¾ cup sour cream
- 1 tbsp lemon juice
- small can olives, drained
- yellow food coloring
- green food coloring
Mash eggs with 2 tbsp mayonnaise and pimento; Reserve. Blend cream cheese and sour cream. Mix ¼ cheese mixture with onion and walnuts. Reserve. Mix ¼ cheese with olives. Reserve. Tint ½ cup cheese with yellow food coloring. Reserve. Color balance of cheese with green food coloring. Reserve. Assembly: Place bottom layer of bread on serving patter; spread with salmon filling. Add layer of bread spread with cheese-onion-walnut filling. On third layer of bread, spread egg filling. On fourth layer, spread cheese-olive filling. Top with final layer of bread. To finish: frost top and sides of loaf with green-tinted cheese. Make a decorative border of yellow cheese. Garnish with fresh flowers or use other garniture – radish roses, carrot curls and stuffed olives.
